Thai Basil Chicken

I LOVE thai food. there's something about thai food that makes my mouth water. some even say that Thai cooking is the essence of asian cooking. to me, yes it is, alongside our malay cooking :)

This recipe is a basic one. its very quick and easy but still gives the thai flavour. the main ingredient is thai basil.

There's actually a few types of basil grown in thailand, each with slight difference in appearance and flavour. there's thai basil (bai horapa), there's holy basil (bai grapao) and lemon basil (bai manglaek). for this dish, i uesed thai holy basil (they only carry holy basil at the toko).

THAI BASIL CHICKEN

Chicken Breasts - cut into bitesized pieces
Vegetable Oil
4 Cloves Garlic - chopped
3-4 Fresh Red Chillies - seeded and finely chopped
3-4 tbsp Thai Fish Sauce
2-3 tbsp Soy Sauce
a tad bit of sugar
salt to taste
Holy Basil leaves

Method:

1. Heat oil in wok. Add garlic and chillies and stir fry on a medium heat for a couple of mins or until fragrant. make sure garlic's not burnt, if not it'll taste bitter!
2. Add chicken to the wok and stir fry until they change colour.
3. Stir in the fish sauce, soy sauce and sugar and continue to stir fry for another 4 mins or so until the chicken is cooked.
4. Add in basil leaves and give it a little bit of a good mix.

How simple's that for a quick thai fix?

My last raya open house was a menu of thai (ya ka ni) food.

Thai Curry Prawn with Pineapple
Beef Patayya style
Sweet and Sour Garoupa
Som Tam Mango
Broccolli sauteed in garlic
Bread pudding with homemade custard sauce
Pengat pisang with real gula melaka
Watermelon juice
Coffee 434

Nah, smart folks go for bargains, Zaza. I am a bargains hunter myself, to the extent of marking new items and waiting for them to get into the clearance bins! BTW, cooked Thai Basil Chicken for dinner last night, turned out a bit darker than yours but SO YUMMY! Thanks for sharing the recipe.
