Onion Bhaji



This is the perfect start to your indian dish. they are light and full of flavours. you can serve them as starters, and part of your main course. as you already know, we have our indian nights about once a week. now fasting month is over, indian nights are back on! sometimes we crave for those tandoori chicken, chicken tikka and those curries. it is almost impossible to go out and have a good indian meal here, none in sittard, and no indian take aways as well.. so we just make do with what i can come up with (or shall i say dare to try?)

I made some onion bhajis, Aidan was tempted to give it a go, look at him helping himself!





ONION BHAJIS

1 Large Egg
1 tbsp Lemon juice
150ml (appx) Water
175g Plain Flour
1 tsp Ground Cumin
1/2 tsp Tumeric
1 tbsp Chilli Powder
1 tsp Garam Masala
Salt
3 Whole onions - finely sliced
Oil
Lemon Wedges - to serve
Youghurt Sauce/Mint Sauce - to serve


Method:

1. Break the eg into a small bowl, then add the lemon juive and water and whisk lightly together.
2. In another bowl, sieve flour and spives together, then stir in the salt. make a well in the centre of the flour and pour the egg mixture. using a fork, gradually incorporate the flour into the liquid until a thick batter is formed. leave to stand for 15 mins.
3. Heat the oil in a deep fryer.
4. Stir the onions into the batter and using a tablespoon, scoop them to the hot oil to cook, turning them frequently.

zaza: I stumbled onto your blog and was mesmerisedby your arts and crafts and cooking panache!

I am an ardent fan of Laksa Johor (even if I am not a Johorean)and have been making it for year. People comment that my laksa is okay but I know I could never beat a true Johorean Laksa Johore. Do you mind exchanging recipes?

I make a similar fritter to your Onion Bhaji but its Vegetable Bhaji! Just substitute the onions with Cabbage, carrots, big chopped red onions, a little bit of pounded garlic and a smattering of chopped udang basah - voila! you have a healthy excuse to pig out. It is a firm favourite in my home and was created by my maid.

We call them Sumi Vege Fritters.

Hi Zaza! Melvis here, i got my passport! And there's an Indian take-away in Roermond. Not too bad. Somewhere along Kapellerlaan, near the church Kapel in 't Zand. The rice is no good. So only go for the curries. Also no tandoori, such a shame. The nicest and nearest tandoori i've ever had here is in this Indian restaurant in Eindhoven - Touch of India. I don't know if it still exists, though! There's also an Indian restaurant in Roermond, run by a Bangladeshi, so it isn't as authentic. They try to copy the Indian restaurants in the UK. It's near the library. So if you're ever in Roermond and craving for curry, you can try one of these two!

With the lack of Indian restaurants, it's great that you can get all the Indian spices to cook with or did you import them??

lifebloom: sorry for this late reply.. thanks for dropping by. you know what sometimes, the non johorian makes the best laksa johor too you know! ;) i dont mind changing recipes but mine is somewhat vague, i dont really have the exact amount, and if you dont mind, i'd be happy to share.

melvis: hey you! sorry i havent been in touch. quite busy for the past couple of months. very busy infact. GLAD to know you got your passport!! yeyyyy!! we went to roermond the other day, brought my sister and family to the outlet. i will surely take note of the indian rests there! thanks ever so much!!

rita: we get our spices locally, some of course we import! hehe. whenever we're in th uk, we tend to buy a few there. garam masala's almost everywhere here! (p.s: i'll email you soon k?)

Ingredients for chicken marination (overnight)
• 700 gms chicken
• 3-4 tbsps sour yogurt
• 1 tbsp crushed ginger
• 1 tbsp crushed garlic
• 3-4 green chillis chopped
• hand full of mint
• 1 tsp garam masala
• 1 tbsp freshly toasted and ground cumin powder
• salt
Rub all these into the chicken and cover and refrigerate overnight.
